I’ve found 2 great documents about MS Exchange protocol documentation and MS Exchange and Outlook Standards. The MS Exchange protocol documentation provides detailed technical specifications for the Microsoft protocols that are implemented and used by Microsoft Exchange to interoperate or communicate with other products. It also provides technical specifications for extensions to industry-standard and other published protocols that are used by Microsoft Exchange.

With Exchange Server 2010 SP1 there’s the possibility to change your password using OWA when it expires. When a user’s password is changed and the “User must change password at next logon” is set you can easily test this.
Microsoft released a tool which helps you migrate your excisting 2003/2007 Exchange enviroment to 2010. Also this tool can be used to install a complete new Exchange 2010 enviroment.
